hearty italian soup
1 cup of turnip diced
2 1/2 cup of potatoes diced
2 cups of butternut squash diced
2 onions diced
2 cups of collard greens (cut 2”x2”)
4 stalks of green onion
1 can white beans (or whatever you like)
2 bay leaves
4 whole garlic (crushed)
1/2 teaspoon of thyme
1/2 teaspoon of rosemary
7 cups of water (hot)
3 Italian sausage (hot or sweet)
crack pepper
salt (to taste about 1 tablespoon)
1 tablespoon olive oil

INSTRUCTIONS:
This healthy and hearty soup will keep your wallet skinny as well as your ass, trust me you’ll be eating this for days and not get sick of it. Here are the instructions.
In a large stockpot drizzle some olive oil and heat pot to medium – high, while that is heating cut up the 3 sausages into 1”x1” rings, and place in the heated pot. Once the sausages are brown add the onions and garlic and stir till the onions soften. Dump the rest of the ingredients into pot and add hot water. When the soup comes to a boil, cover and turn down the heat to low or a slow simmer.
This soup is great with noodles, rice or crackers and is better the day after.
