meatastic turkeyloaf!
(lifted from real simple with my touches)
1.5 lb of ground turkey
1 chopped onion
1 box of frozen spinach
1/2 cup of whole wheat bread crumbs (i just toasted 2 slices of 8-grain bread and cubed it)
2 tbs of dijon mustard
1 large egg
Ketchup
Salt and pepper to taste
optional mashed tatters
2 lbs potatoes
2 cloves of garlic
Salted Butter

INSTRUCTIONS:
Preheat over at 400F degrees.
Toast your bread and cubed when crispy.
Drain frozen spinach of as much water as possible.
In a bowl, mix up turkey, onion, spinach, bread crumbs, mustard , egg white, salt and pepper.
Transfer the mixture to a baking sheet and form it into a 10-inch loaf. Spread with ketchup. Bake until cooked through about 45-50 minutes.
If making mash, put potatoes in a large pot of cold water. Simmer until tender, 20-25 minutes. Drain the potatoes and mash away. I put in 3/4 stick of butter and chopped garlic. Pepper to taste.
